Brownies Without Cocoa Powder

Chocolate lovers beware: These brownies without cocoa powder are simple to prepare and wonderfully moist.

Ingredients

  • 200 g dark chocolate couverture
  • 100 g butter
  • 160 g sugar
  • 100 g flour
  • 2 tsp Baking powder
  • 6 Eggs

Instructions

    Melt the broken dark chocolate over a hot water bath, then remove from the bath. Add butter and sugar and let them melt together. Separate the eggs. Stir the yolks and flour into the chocolate mixture and mix well. Whisk the egg whites very stiffly and gently fold them in.

    Line a baking sheet with parchment paper, pour the batter onto it, and place it in a cold oven. Set the oven to 180°C (fan) and bake for about 40–50 minutes until firm. Test with a wooden stick; if no liquid batter sticks, they are done. Remove from the oven, transfer onto a rack using the parchment paper, let cool, then remove the parchment and cut into pieces.
