Ingredients
- 60 g dark syrup
- 100 g sugar
- 1 packet vanilla sugar
- 125 g butter
- 2 tbsp water
- 1 tsp ground cloves and ginger
- 1 heaping tsp cinnamon
- 250 g wheat flour
- baking powder
- 20 g finely chopped almond kernels
- 40 g finely chopped lemon zest
- 100 g almond kernels
- flour (for rolling)

Add syrup, sugar, vanilla sugar, butter, and water to a pot and slowly warm while stirring frequently. Let the mixture cool, then knead in spices, flour, and baking powder. Fold in chopped almonds and lemon zest, wrap in foil, and refrigerate overnight.

Briefly steep the almonds and remove their skins. Split the almonds in half.

Roll out the dough on a floured surface into thin sheets and cut into approximately 6x7 cm rectangles. Top each rectangle with four almond halves. Place the cookies on a parchment-lined baking sheet and bake in a preheated oven (175°C) for 8-10 minutes.
