Broccoli Nuggets from Spoonsparrow are always delicious! Try the healthy alternative to nuggets.

Ingredients

  • 1 Broccoli
  • 50 g onions
  • 1 Tbsp coriander leaves
  • 1 tbsp fresh rosemary
  • 180 g gluten‑free breadcrumbs
  • 120 g cheddar cheese
  • 1 egg
  • Salt
  • Pepper

Instructions

    Cook the broccoli in lightly boiling water for about 3 minutes. Then drain and let it cool.

    Blend the broccoli, onions, coriander, rosemary, breadcrumbs, cheese, egg, and a pinch of salt and pepper in a blender until smooth.

    Shape the mixture into small nuggets and place them on a baking tray.

  4. 4.

    Bake in a preheated oven at 200 °C (180 °C fan‑forced; gas mark 3) for about 18–24 minutes, until the broccoli nuggets are lightly browned.
