Ingredients
- 400 g broccoli florets
- Salt
- vegetable oil (for the baking tray)
- 250 g flour
- Pepper
- 1 pinch nutmeg (grated)
- 1 tsp Baking powder
- 100 g minus-L grated Emmental cheese
- 150 ml milk
- 3 eggs

Rinse the broccoli and blanch in salted water for about 4 minutes. Shock, drain well, and finely chop.

Preheat the oven to 180°C fan. Oil the muffin tin cavities with a brush.

Mix flour with 1/2 tsp salt, pepper, nutmeg, baking powder, and cheese. Whisk milk with eggs. Quickly fold the dry mixture into the wet until smooth. Fold in broccoli and fill the tins. Bake in preheated oven for about 25 minutes.

Remove from oven, let cool slightly, release from molds, and cool on a rack or serve warm.
