Hold the cooked lobster on its carapace and turn off the claws at the body.

Cut the lower segments of each claw from the joint.

Bend the upper, small claw finger back and pull it away.

Score the large claw's shell with a heavy knife.

Slice around the shell from all sides until it breaks apart.

Separate the shell, remove the claw shells, loosen the meat, and extract it from the shell.

Place the knife behind the lobster’s head and cut the tail in half.
