Breakfast Blueberry Muffins for the Thermomix®

These sweet breakfast muffins with blueberries for the Thermomix are only sweetened with bananas and feature a light, airy texture.

Ingredients

  • 30 g Coconut oil (2 tbsp)
  • 175 g spelt whole grain flour
  • 1 heaping tsp baking powder
  • 0.5 tsp Salt
  • 2 Eggs
  • 150 ml almond drink (almond milk)
  • 1 Banana
  • 125 g Blueberries
  • preserve (or powdered sugar for garnish)

Instructions

    Weigh coconut oil into the mixing bowl and melt at 37°C on speed 1 for 1.5 minutes.

    Meanwhile, wash and drain blueberries. Line a muffin tin with paper liners.

  3. 3.

    Add eggs and almond milk to the coconut oil in the mixing bowl and whisk for 30 seconds on speed 5.

    Peel the banana, cut into pieces, then add it with flour, baking powder, and salt to the mixing bowl and stir for 30 seconds on speed 4 until a batter forms.

    Fold in blueberries using the spatula. Divide the batter evenly among the muffin cups and bake in a preheated oven at 190°C (170°C fan; gas: level 2–3) on the middle rack for about 25 minutes. Garnish with preserve or powdered sugar as desired.
