Ingredients

  • 8 tomatoes
  • 1 Garlic clove
  • 2 salad hearts
  • 2 tbsp white balsamic vinegar
  • 2 tbsp lemon juice
  • 1 pinch sugar
  • 1 tbsp freshly chopped basil
  • Salt
  • pepper (ground)
  • 800 g hard cheese (e.g., Emmental or Gruyère)
  • 2 Eggs
  • 80 g breadcrumbs
  • 3 tbsp clarified butter

    For the salad, blanch the tomatoes in hot water, shock them, peel, quarter, seed and dice finely. Peel and finely chop the garlic. Wash, trim and tear the salad hearts into small pieces. Mix the garlic, balsamic vinegar, lemon juice, sugar and basil with the tomatoes and season with salt and pepper.

    Cut the cheese into approximately 0.5 cm thick cubes. Dip them in beaten eggs and coat with breadcrumbs. Fry each side for 1-2 minutes until golden brown in hot clarified butter in a non-stick pan. Drain on kitchen paper.
