Bell Peppers Stuffed with Ground Meat and Rice

Ingredients
- 4 red bell pepper halves
- 400 g mixed ground meat
- 2 tbsp clarified butter
- 1 finely chopped onion
- 1 Garlic clove
- 1 egg
- 100 g cooked rice
- Salt
- ground black pepper
- 500 g tomatoes
- 2 tbsp butter
- 1 tbsp flour

Cut a lid off the bell peppers, deseed and wash them.

Sauté the onion in hot clarified butter, press in the garlic, add the meat and cook until crumbly, season with salt and pepper, then let cool.

Mix the ground meat mixture with egg and rice, and fill the peppers.

Wash the tomatoes, roughly chop them and bring to a boil with 1/8 l water, season with salt and pepper, simmer gently for about 30 minutes, then strain through a sieve.

For the sauce whisk butter, stir in flour, sauté briefly, then add the strained tomatoes and blend into a sauce; taste and adjust seasoning.

Place the stuffed peppers in a casserole dish, pour over the tomato sauce, and steam in an oven at 200°C for about 25 minutes.
