Ingredients

  • 8 eggs
  • 1 onion
  • 2 tbsp chive rings
  • 1 tbsp finely chopped parsley
  • 2 tbsp medium-hot mustard
  • 6 tbsp mayonnaise
  • Salt
  • Pepper
  • pinch cayenne pepper

Instructions

    Boil the eggs for 10 minutes, cool in cold water, peel and let them cool completely.

    Peel and finely chop the onion. Finely chop six eggs; slice two eggs into thin rounds.

    Combine chopped eggs, onion, chives, parsley, mustard, and mayonnaise, then season with salt, pepper, and cayenne pepper.

    Spread onto (flaxseed) bread slices for serving and garnish with egg rounds.
