Ingredients

  • 200 g Flour
  • 0.5 cube fresh yeast (20 g)
  • 0.5 tsp Sugar
  • 1 tsp salt
  • 3 hops
  • 300 ml water
  • 200 g wheat bran
  • a pinch of anise
  • coriander
  • 1 caraway

Instructions

    Whisk the yeast with 100 ml lukewarm water and the sugar until smooth, then let stand for about 10 minutes.

    Add flour and salt to a mixing bowl, pour in the dissolved yeast, and knead into a smooth dough using the paddle attachments of an electric hand mixer. Let rise in a warm place for about 45 minutes.

    Boil the hops in approximately 40 ml water for 3 minutes, cover, and let cool.

    Sift the cooled liquid into a bowl, press out the water from the hops, add wheat bran to this mixture, and combine with spices.

    Mix the thick mass well with the yeast dough. Add more wheat bran if needed until the dough is easily shaped. With flour‑dusted hands form walnut‑sized balls and arrange them in a line on a parchment‑lined tray. Bake in a preheated oven at 180 °C. Afterwards, keep drying in a warm oven with the door open. The balls can be halved while drying. Once fully cooled, grind or crumble the dough balls into powder and store in a dry place.

    When baking bread, add 1 tablespoon of this powder to 500 g flour for an exceptional flavor. Prefer spelt flour for baking!
