Tahini Bread

Ingredients
- 500 g flour
- 1 cube yeast
- 280 ml milk
- 25 g sugar
- 25 g butter
- 2 tbsp sesame seeds
- 40 g tahini
- 3 tbsp honey
- 1 pinch salt
- 2 tbsp milk (and 2 tbsp butter for brushing)
- flour (for working)

Put flour in a bowl and form a well. Break the yeast into it and stir with 4 tbsp lukewarm milk. Cover and let rise for about 30 minutes in a warm place. Then add remaining lukewarm milk, sugar and butter and knead thoroughly with a stand mixer until glossy dough forms. Cover again and let rise for another 30 minutes. Knead vigorously on floured work surface and roll into a rectangle (about 60x20 cm). Spread tahini and drizzle honey. Roll lengthwise to form a 60 cm long roll, then twist into a snail shape.

Butter a springform pan and sprinkle the bottom with sesame seeds. Place the dough snail in the pan and cover; let rise for about 30 minutes. Brush with warm milk and bake in preheated oven at 180°C fan-forced for about 40 minutes until golden brown (test with a toothpick). Remove from oven, spread melted butter on top and allow to cool slightly. Take out of the pan and cool on a wire rack.
