Ingredients
- 500 g Taglierini
- Olive oil (extra virgin)
- Salt
- Pepper (freshly ground)
- 300 g black olives (pitted)
- 3 spring onions

Cook the Taglierini in plenty of salted water. Meanwhile, slice the olives into thick rings. Wash and trim the spring onions, then cut them into thin rings.

Drain the pasta and reserve a little cooking water. Mix the pasta with 4 tbsp olive oil, the spring onion rings, 2-3 tbsp of reserved water, and the olives. Season with salt and plenty of pepper, serve immediately. Optionally sprinkle grated Pecorino cheese.
