Braised Peppers with Chicken and Arugula

Ingredients
- 6 bell peppers (red and yellow)
- 1 onion
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- balsamic vinegar
- 4 chicken breast fillets (~120 g each)
- arugula for garnish
Instructions

Wash the pepper halves, cut them into strips. Peel and dice the onion finely. Sauté in hot olive oil until translucent.

Add the pepper pieces, season with salt and pepper, cover and simmer gently for about 5 minutes. Finish with balsamic vinegar and add a splash of water if needed.

Pat the chicken breasts dry, slit lengthwise, season, then grill in 1–2 tbsp oil for 6–8 minutes per side until golden brown.

Plate the braised peppers with grilled chicken, garnish with arugula, drizzle with a little balsamic glaze, and serve.
