Lemon Pork Chops

Ingredients

  • 4 pork chops
  • 4 small green bell peppers
  • 3 untreated lemons
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp Olive Oil
  • capers (for garnish)
  • chopped chives (for garnish)

Instructions

    Wash the peppers and pat them dry. Wash the pork chops, pat them dry, and sear each side in a heavy skillet or grill pan without adding fat for about 4 minutes per side, turning frequently to avoid overcooking one side. Remove the chops from the pan and add the peppers. Slice the lemons and roast them in the still hot pan on both sides.

    Season the pork chops with salt and pepper and drizzle each with a little olive oil. Plate the chops over the roasted peppers with lemon slices and garnish with capers and chopped chives, serve immediately.

    Serve with a mixed salad.
