  • 1 kg deer tenderloin
  • 40 g lean bacon
  • 50 g butter
  • 1 onion
  • 20 g potato starch
  • 20 g flour
  • iodized salt
  • Pepper

    Wash, dry, remove skin from the meat and coat with flour. Heat butter in a pan, add the bacon-wrapped or covered deer tenderloin and brown it well in an open pot. Then season with salt and pepper. Chop the onion finely and simmer together. Gradually pour hot water over the edge (not onto the meat) and cover to slow-cook slowly. Turn the meat multiple times and add more water as needed. When the meat is cooked after about two hours, strain the sauce, thicken with potato starch and season to taste. The deer tenderloin becomes even more tender if it is marinated in buttermilk for two to three days before braising.
