Steamed Chinese Cabbage with Meat Filling

Ingredients
- 250 g tender Chinese cabbage
- 250 g pork fillet
- 250 g shrimp (prepped, peeled)
- 4 egg whites
- 20 g corn starch
- Salt
- pepper (ground)
- 2.5 tbsp rice wine
- 250 ml chicken broth
- 2 tbsp chives rings

Pass the pork fillet and shrimp through a meat grinder one after another. Mix the meat and shrimp with salt, pepper, and rice wine.

Wash the cabbage leaves and cut off the thick edges. Halve the leaves lengthwise.

Bring plenty of water to a boil in a pot. Blanch the cabbage for about 1 minute. Then shock in cold water, drain, and place on a plate.

Whisk the egg whites and corn starch together and mix with the meat-shrimp mixture. Put chicken broth into a pot with a steamer insert. Fill the cabbage leaves lengthwise with the mixture and carefully place them on the steamer (filling up) . Steam for 10-15 minutes until cooked. Arrange the filled leaves on a plate and pour the remaining broth from the pot over them. Sprinkle with chives rings and, if desired, chopped chili peppers before serving.
