Grilled Spare Ribs with Potato Salad

Ingredients
- 1.5 kg pork ribs
- 1 bundle oregano (chopped)
- 1 tbsp honey
- 1 tbsp vinegar
- 2 tbsp Soy sauce
- 1 tsp curry powder
- 1 green chili pepper (chopped)
- 100 g ketchup
- Salt
- freshly ground pepper
- 700 g potatoes (starchy)
- 1 handful lamb's lettuce
- 1 shallot (diced)
- 150 ml meat broth
- 3 tbsp white wine vinegar
- 4 tbsp oil

Wash potatoes and simmer in salted water for about 30 minutes.

Clean ribs, pat dry. Mix oregano with honey, vinegar, soy sauce, curry, chili, and ketchup. Season heavily with salt and pepper. Rub the mixture onto the ribs. Grill on a preheated oven grill setting for about 25-35 minutes, basting frequently and turning as needed.

Peel potatoes, let cool slightly, then slice into rounds.

Bring broth with shallot to a boil, pour over potato slices. Season with salt and pepper, stir gently, and let rest for 10 minutes. Wash and trim lamb's lettuce, add to the salad. Whisk in oil, taste, and serve alongside the ribs.
