Ingredients

  • 150 g Spelt flour Type 1050
  • 1 tsp Baking powder
  • 100 g brown sugar
  • Pinch of salt
  • 120 g room temperature butter
  • 3 ripe bananas
  • 1 egg
  • 150 g rolled oats
  • 60 g Almonds
  • 1 tbsp cocoa nibs
  • 2 tbsp chocolate drops (dark chocolate; 15 g)

Instructions

    Mix flour with baking powder, sugar and a pinch of salt. Add butter in pieces and mix. Peel bananas, mash with a fork and add to the dough together with the egg. Mix well with a hand mixer. Fold in rolled oats, almonds, cocoa nibs and half of the chocolate drops.

    Line a baking sheet with baking paper. Place the dough on the baking sheet with a tablespoon, leaving enough space between the cookies. Sprinkle with the remaining chocolate drops and bake in a preheated oven at 200 °C (180 °C convection; Gas: level 3) for 10–15 minutes. Then let cool on a wire rack.
