Smart Spelt Whole Grain Rolls

These smart spelt whole grain rolls from Spoonsparrow are easy to prepare and taste like they came from a bakery.

Ingredients

  • 350 g spelt whole wheat flour
  • 150 g Spelt flour Type 1050
  • 1 tsp salt
  • 1 packet dry yeast (or 1/2 cube fresh yeast)
  • 0.5 tsp raw cane sugar
  • 355 ml oat drink (oat milk)
  • 1 tbsp rolled oats
  • 1 tsp poppy seeds

Instructions

    Mix the flours with salt, add yeast and sugar and knead with 350 ml of oat drink into a smooth and elastic dough. Let it rise covered in a warm place for half to one hour.

    Then knead again. Divide the dough into two long logs and then divide each into five pieces. Shape the pieces into balls and place them on a baking sheet lined with parchment paper. Make a slight incision in the middle with a knife, brush with the remaining oat drink and sprinkle with rolled oats and poppy seeds.

    Let the dough balls rest for another 30 minutes in a warm place. Preheat oven to 200 degrees Celsius (180 degrees Celsius convection). Then put the baking sheet in the oven and place a heatproof vessel with a little water on the bottom of the oven. Bake the spelt whole grain rolls for about 20 minutes until golden brown. Then remove from the oven and let cool.
