Ingredients

  • 1 kg new potatoes
  • Sea salt
  • 1 untreated lime
  • 500 g quark (or low-fat quark if preferred)
  • 100 g yogurt (low-fat if desired)
  • 1 apple
  • 2 sprigs Mint
  • black pepper from the mill

Instructions

    Cook the potatoes in salted water for about 25 minutes.

    Grate a little zest from the lime and squeeze out its juice. Mix both into the quark and yogurt. Peel the apple, quarter it, remove the core, and dice the quarters. Tear off mint leaves for garnish, set aside some, finely chop the rest and fold into the quark with the apple cubes.

    Season with salt and pepper and arrange on plates with the potatoes. Sprinkle a little sea salt over the potatoes and serve garnished with mint.
