Blue Cheese Toast

Ingredients

  • 2 large slices whole grain bread
  • 1 small radicchio
  • 2 tbsp olive oil
  • 1 tsp liquid honey
  • 20 g walnut kernels
  • 1 very ripe, soft pear
  • 150 g blue cheese
  • Salt
  • Pepper

    Cut the bread slices in half and toast them. Wash, trim, and slice the radicchio into fine strips. Heat the oil in a pan and quickly sauté the radicchio over medium heat, then drizzle with honey and let it lightly caramelize. Spread on the toasted bread slices. Roughly chop the walnut kernels.

    Peel the pear, quarter it, remove the core, and mash the flesh in a bowl with blue cheese using a fork into a puree. Season with salt and pepper. Spoon the blue cheese cream onto the toast slices and sprinkle with walnuts. Serve the blue cheese toast warm.
