Ingredients

  • 125 g flour
  • 1 pinch salt
  • 2 eggs (size S)
  • 25 g melted butter
  • 250 ml milk
  • vegetable oil (for baking)
  • 1 baby pineapple
  • 1 Papaya
  • 1 Avocado
  • 2 tbsp lemon juice
  • red pepper
  • 2 tbsp Lime juice
  • 1 pinch salt
  • 1 pinch nutmeg
  • 1 pinch sugar
  • 2 tbsp oil
  • 4 tbsp canned corn kernels

Instructions

    Mix flour with salt in a bowl. Whisk eggs, then stir in butter and milk into the flour mixture. Let rest for 30 minutes.

    Meanwhile, peel and quarter the pineapple, remove skin and cut into pieces. Halve the papaya, pit it, peel and cut into chunks. Halve the avocado, remove the seed, peel the halves, then dice and mix with 1 tbsp lemon juice. Slice the pepper, clean it and discard seeds. Rinse the stem and finely chop. Combine remaining lemon juice, lime juice, salt, nutmeg, sugar, and oil. Mix fruits, avocado, pepper, and corn with the dressing and let marinate.

    Bake thin crêpes in a little hot oil from the dough and serve alongside the salad.
