Blackberry Ice Cream without an Ice Cream Maker

The blackberry ice cream tastes especially good on warm summer days.

Ingredients

  • 800 g blackberries
  • 150 g sugar
  • 2 tbsp cassis
  • 1 tbsp Lemon Juice
  • 2 tbsp honey
  • mint (for garnish)

Instructions

    Wash the blackberries, pat dry, finely puree and strain through a fine sieve. In a pot combine the sugar and 150 ml water. Bring to a boil and simmer for 4-5 minutes until sparkling. Strain again and let cool.

    Stir the berry purée with the liqueur, lemon juice and honey, pour into a shallow bowl and place in the freezer for at least 4 hours. Stir vigorously every 20 minutes to prevent large ice crystals from forming.

    Take out of the freezer 5-10 minutes before serving. Use an ice scoop to cut spheres, fill glasses and garnish with fresh blackberries and mint.
