Ingredients

  • 400 g strawberries (ripe, deep red)
  • 100 g sugar (more if needed)
  • 2 tbsp lemon juice
  • 2 tbsp orange liqueur
  • Champagne (as desired)

Instructions

    Wash the strawberries gently, then remove any flower stems.

    Place strawberries, sugar, lemon juice and alcohol in a tall glass container and puree with an immersion blender. Transfer the fruit mixture to the freezer. When it begins to freeze, vigorously mix with a fork. Repeat this three to four times every 10–15 minutes so that large ice crystals do not form.

    Before serving let the sorbet thaw slightly so you can shape balls. Form balls and arrange them in champagne glasses, topping with champagne. Serve immediately.
