Lemon Sorbet

Ingredients

  • 100 g sugar
  • 4 green limes (unprocessed)
  • 1 Egg white
  • 1 grapefruit

Instructions

    Cook the sugar with 4 tbsp water until syrupy, then let cool.

    Peel and juice the limes with a microplane. Slice the zest into fine strips. Add the juice and zest to the syrup and let steep for 12 hours. Whisk the egg white until stiff peaks form and fold into the syrup.

    Freeze the mixture in an ice cream maker or a shallow metal pan, stirring occasionally.

    Peel a pomelo with a sharp knife and cut along the membranes to create beautiful slits, collecting the juice.

    Before serving let the sorbet soften slightly and scoop with a spoon. Arrange on a plate with the pomelo slices and a splash of juice.
