Blackberry Cream

Creamy and fruity at the same time: The blackberry cream from Spoonsparrow is quick to prepare and always delicious.

Ingredients

  • 400 g blackberries
  • 80 g honey
  • 1 tbsp Lemon Juice
  • 300 g Low-fat quark
  • 250 g 1.5% fat yogurt
  • 200 g heavy cream (30% fat)
  • 0.5 Vanilla bean

Instructions

    Rinse, wash, and drain the blackberries; set aside eight for garnish. Blend the remaining berries with erythritol and lemon juice in a blender until smooth. Whisk the quark with the yogurt until creamy.

    Beat the cream to stiff peaks. Split the vanilla bean lengthwise and scrape out the seeds. Gently fold the whipped cream, vanilla seeds, and berry purée into the quark mixture.
