Ingredients
- 100 g soft butter (+ a little for the pan)
- 60 ml maple syrup
- 1 tsp vanilla extract
- 4 eggs
- 200 g almond flour
- 3 tbsp cocoa powder (strongly defatted)
- 2 tsp Baking powder
- a pinch of salt
- 4 tbsp Milk (3.5% fat)
- 100 g dark chocolate (at least 70% cacao content)
- 200 g apricots

Beat butter, maple syrup, vanilla extract and eggs in a bowl until frothy.

Mix almond flour, cocoa powder, baking powder and salt in another bowl. Melt dark chocolate over a water bath or in the microwave.

Alternately combine dry ingredients with liquid ingredients, milk and melted chocolate to form a smooth batter. Pour batter into a greased pan. Wash apricots and pat dry. Halve them, remove pits and quarter each piece. Distribute apricots on top of the batter and bake low-carb brownies in a preheated oven at 180 °C (convection 160 °C; gas level 3) for 20 minutes.
