Blackberry Cake with Sour Cream

Ingredients

  • 2 Eggs
  • 100 g sugar
  • 750 g sour cream
  • 0.5 untreated lemon (juice and zest)
  • 800 g blackberries
  • 150 g quark (drained)
  • 100 g sugar
  • 50 ml milk
  • 50 ml plant oil
  • 1 packet baking powder
  • 300 g flour
  • butter (for the pan)

Instructions

    Preheat the oven to 180°C fan.

    For the dough, mix the quark with sugar, milk and oil until smooth (best with a hand mixer), add the flour mixed with baking powder and knead into a supple dough. Butter a pan or line it, pour in the dough and spread evenly.

    For the topping, beat the eggs with sugar until fluffy. Fold in the sour cream, lemon zest and juice and spread over the base. Rinse, wash and pat dry the blackberries. Distribute them over the cake and bake in the preheated oven for about 35-40 minutes until golden brown.
