Ingredients

  • 150 g spelt flour type 630
  • 2 tsp Weinstein baking powder
  • 1 pinch salt
  • 2 tbsp cocoa powder (strongly defatted)
  • 3 tbsp maple syrup
  • 200 ml Milk (3.5% fat)
  • 2 tsp Rapeseed Oil
  • 0.5 small vanilla pod
  • 150 g quark (20% fat)
  • 140 g cherries
  • 1 tbsp grated dark chocolate (min 70% cacao)

Instructions

    Combine all dry ingredients in a bowl and mix. Add milk and maple syrup, whisk until smooth; if the batter is too thick, add a splash of milk.

    Heat 2 tsp oil in a non‑stick pan, pour about 1 tbsp batter per pancake, cook 4–6 pancakes for 3–4 minutes on each side over medium heat until golden brown.

    Meanwhile split the vanilla pod lengthwise and scrape out the seeds with a knife. Mix quark and vanilla into a smooth spread.

    Serve pancakes on two plates topped with quark, cherries, and grated dark chocolate. Sweeten to taste if desired.
