Ingredients
- 200 g Flour
- 2.5 tsp baking powder
- 1 pinch salt
- 2 Eggs
- 300 ml milk
- 2 tbsp liquid honey
- butter (for frying)
- 100 g raisins
- 2 tbsp rum (or apple juice)
- powdered sugar

Separate the eggs, beat the egg whites until stiff peaks form. In a bowl combine the remaining ingredients except raisins and rum, whisk with an electric hand mixer until smooth. Rest for 30 minutes. Wash the raisins and marinate them in rum. After resting, fold the marinated raisins and beaten egg whites into the batter.

Heat some butter in a pan, pour a small amount of batter to spread about 10–12 cm in diameter, cook 2–3 minutes on one side, flip and finish cooking. Remove and keep warm; continue baking until batter is used up. Dust pancakes with powdered sugar, arrange on plates and serve.
