Berry Tofu Protein Shake with Mango
The berry tofu protein shake with mango from Spoonsparrow is not only vegan, but also provides a fruity-fresh start to the day.
Ingredients
- 100 g Strawberries
- 150 g raspberries
- 50 g Blueberries
- 20 g baby spinach
- 150 g Bananas (1 banana)
- 100 g Mango pulp
- 100 g avocado (one half)
- 0.5 organic lime
- 1 Vanilla bean
- 200 g firm tofu
- 1 tsp flaxseed meal
- 400 ml almond drink (almond milk)

Wash and clean the strawberries. Wash and drain the raspberries and blueberries, reserving 2-3 berries each. Wash and spin dry the baby spinach. Peel and chop the banana and mango into small pieces.

Scoop out the pulp of half an avocado with a spoon from the skin. Rinse the lime with hot water, rub it dry, halve it, and squeeze out the juice. Split the vanilla bean lengthwise and scrape out the vanilla seeds with a knife.

Combine the prepared fruit and vegetables with lime juice, vanilla seeds, tofu, flaxseed, and soy drink in a blender or mix evenly with an immersion blender. Carefully pour the drink into 3 glasses. Distribute the raspberries and blueberries on top of the berry tofu protein shake with mango and serve.
