Ingredients

  • 1 kg wild medlar
  • 500 g gelification sugar (2:1)
  • 2 tbsp lemon juice

Instructions

    Wash, prune and halve the wild medlars. Combine with sugar in a pot, stir well and let stand for 1 hour. Heat while stirring, add lemon juice and simmer for 5 minutes until sparkling.

    Fill prepared screw-top jars to the brim and seal tightly. If seeds are bothersome, strain through a sieve. Let the jam cool completely, label and serve.
