Ingredients
- 1 kg watermelon flesh
- 1 untreated lemon (juice)
- 500 g gelatin sugar (2:1)
- 1 bundle fresh mint

Remove the flesh from the seeds, cut into small pieces and puree with lemon juice. Mix in the sugar, transfer to a pot and simmer for 4 minutes while bubbling.

Wash the mint, fold it into the gel, pour hot into well-rinsed jars and seal with twist-off lids. Place upside down for 10 minutes, then turn right side up and allow to cool completely. Store refrigerated and dark.
