Ingredients

  • 10 untreated lemons
  • 10 tbsp coarse sea salt
  • 4 sprigs Rosemary
  • 2 tsp white peppercorns
  • 1 l olive oil

Instructions

    Wash 8-10 lemons hot, pat dry and cut lengthwise in a cross pattern but not all the way through. Fill each with 1 tbsp sea salt and layer into prepared canning jars. Sprinkle remaining salt on top. Press lemons into the jars so they release juice. Seal and let sit at a cool place for 24 hours, shaking occasionally.

    On the next day, squeeze the juice of the remaining fruits over the lemons. Rinse the rosemary, cut into small pieces, and distribute over the jars. Add pepper, then fill completely with oil and allow to mature for about 4 weeks in a cool, dark place before use.
