Ingredients
- 1 lemon
- 2 g small pears
- 30 g ginger
- 750 ml brandy vinegar
- 200 ml clear apple juice
- 150 g sugar
- 1 tbsp cloves
- 1 cinnamon stick
- 20 g salt

Squeeze the lemon and pour the juice into about 1 l of water.

Peel the pears and cut them into large pieces. Immediately place them in the lemon water. Peel the ginger and slice it into fine strips. Bring the vinegar with the ginger, apple juice, sugar, cloves, cinnamon, and salt to a boil. Use a slotted spoon to add the pears to the broth and simmer for about 5 minutes. Remove and layer in jars. Reboil the broth and pour over the pears. Seal immediately, place upside down for about 10 minutes, then turn right-side up and let cool.
