Beetroot Salad with Parsley

Ingredients

  • 600 g beetroot
  • 2 carrots
  • 1 untreated orange (juice and zest)
  • 2 tbsp Red wine vinegar
  • 4 tbsp rapeseed oil
  • Salt
  • 1 tsp Honey
  • parsley (for garnish)

Instructions

    Wash the beetroot and steam for about 40 minutes. Cool, peel, and let it cool slightly before finely grating. Peel the carrots and grate them as well.

    Whisk together orange juice, zest, vinegar, oil, and honey, then mix with the vegetables. Season with salt and serve garnished with parsley.
