Spicy Watermelon Cold Bowl

The spicy watermelon cold bowl from Spoonsparrow is not only a favorite dish during summer heat!
Ingredients
- 750 g watermelon (half a watermelon; well chilled)
- 4 sprigs lemon thyme
- 200 ml classic vegetable broth
- Salt
- Pepper
- 3 spring onions
- 1 tbsp apple syrup
Instructions

Cut the watermelon into wedges with a large knife and peel.

Pit the watermelon wedges and cut them into pieces.

Wash and shake off the thyme. Strip leaves from 2 sprigs, then blend with the watermelon and broth in a stand mixer or hand blender until smooth. Season with salt and pepper.

Wash the spring onions, drain, trim, and slice diagonally into rings. Quickly toast in a non-stick pan without oil.

Add the apple syrup, bring to a boil once, then let it cool slightly.

Sprinkle the watermelon puree with the spring onion rings, garnish with remaining thyme leaves, and serve.
