Ingredients
- 1 Shallot
- 3 tbsp olive oil
- 60 g red lentils
- 60 g couscous
- 400 ml Vegetable broth
- 3 stalks celery
- 3 tbsp chopped parsley
- juice of one lemon
- Salt
- black pepper (freshly ground)
Instructions

Peel and finely chop the shallot, then sauté it in hot oil until translucent. Add the lentils and couscous, stir briefly, and pour in the broth. Simmer on low heat for 15 minutes.

Wash, trim, and finely slice the celery. Mix with parsley and lemon juice into the lentils and couscous, season with salt and pepper. Let the salad rest and serve warm.
