Chicken Fajitas with Vegetables

Ingredients
- 2 chicken breast fillets (about 150 g)
- 1 tbsp Olive Oil
- 1 red bell pepper
- 1 cucumber
- 4 lettuce leaves (e.g., romaine)
- 1 Garlic clove
- 1 Avocado
- 150 g Sour cream
- 3 tbsp yogurt
- 0.5 lime (juice)
- Salt
- a pinch ground coriander
- 4 wheat tortillas
Instructions

Wash the chicken breasts, pat dry and brown in a hot pan for 8-10 minutes on all sides. Remove from pan and let rest briefly. Wash, peel, halve lengthwise, seed, and dice the cucumber. Dice the bell pepper. Wash lettuce, shake dry, and chop as desired.

Peel the garlic. Halve the avocado, remove pit, discard skin, and blend flesh with sour cream, yogurt, garlic, and lime juice. Season with salt and coriander. Cut chicken into cubes or slices. Mix half of the guacamole with bell pepper, cucumber, and chicken.

Warm tortilla sheets in a dry pan for about 30 seconds each side. Spread remaining guacamole on them. Layer lettuce and the chicken-vegetable mixture. Roll up and serve immediately.
