Beef Strips with Rösti

Ingredients
- 1 kg mostly starchy potatoes
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)
- 3 tbsp clarified butter
- 700 g beef fillet (tenderloin tips)
- 2 shallots
- 2 tbsp Vegetable oil
- 30 ml brandy
- 200 ml beef stock
- 1 tbsp sharp mustard
- 150 ml whipping cream
- Pepper

Peel and grate the potatoes coarsely. Season with salt, pepper, and nutmeg. Add 1-2 tbsp clarified butter to a large hot non-stick pan and pour in the grated potatoes. Spread evenly and press lightly. If needed, add more butter and cook on medium heat for 5-6 minutes until golden brown. Flip using a plate and cook the other side with a bit of butter for another 5-6 minutes until golden.

Drain on kitchen paper and keep warm briefly.

Rinse the beef fillet, pat dry, and cut into strips. Peel, halve, and slice the shallots into strips as well. In batches, sear the meat in hot oil until browned all around, then remove from pan. Sauté the shallot cubes in the drippings for a moment, deglaze with brandy, add some stock, and simmer gently for 2-3 minutes. Add more stock if needed, stir in mustard and cream, then return the fillet strips to the sauce. Do not boil; let it cook for another 3-4 minutes until done. Season with salt and pepper.

Divide the beef stew among four plates and add sliced rösti on top. Serve with green asparagus if desired.
