Beef Stir-Fry with Mushrooms

A fresh beef stir-fry featuring aromatic mushrooms, chilies, onions, garlic, scallions, and cilantro, finished with a sweet chili sauce for a flavorful twist.

Ingredients

  • 1 chili pepper
  • 1 onion
  • 2 Garlic cloves
  • 2 scallions
  • 400 g herbaceous oyster mushrooms
  • 1 handful coriander (cilantro)
  • 600 g beef (e.g., loin or round)
  • 2 tsp Red curry paste
  • 2 tbsp peanut oil
  • 2 tbsp sweet chili sauce
  • Pepper

Instructions

    Halve the chili pepper with gloves, remove seeds and finely dice. Slice the onion into thin strips lengthwise. Dice the garlic cloves finely. Wash and cut scallions into large pieces. Clean the oyster mushrooms and slice them lengthwise about ½ cm thick. Rinse coriander, shake dry, and finely chop. Rinse beef, pat dry, and cut into small thin pieces.

    Sauté the curry paste in 1 tbsp oil for 1–2 minutes. Add chili pieces, onion, garlic, scallions, and mushrooms; stir-fry for about 3 minutes before removing from heat.

    Heat the remaining oil and cook the beef with coriander for about 5 minutes while stirring. Add sweet chili sauce, briefly sauté the mushrooms again, and season with pepper.
