Ingredients
- 2 Rib-Eye steaks
- clarified butter
- 300 g frozen princess beans
- 2 tbsp butter
- Salt
- freshly ground pepper

Wash the steak, pat dry and season with pepper. In a pan with clarified butter sear both sides until crisp. Wrap the meat in foil and let rest at 100°C for 10–15 minutes (about 1 minute per side per cm of thickness).

Cook the beans in a pot of hot water until tender. Before serving, toss the cooked beans in a little butter and season with salt and pepper; place them in a preheated serving bowl. Season the meat again before plating on a warmed plate.
