Beef Goulash with Tomatoes and Vegetables

Ingredients
- 1 kg beef goulash
- 2 stalks leeks
- 1 kg tomatoes
- 2 onions
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tbsp Tomato Paste
- 150 ml red wine
- 400 ml meat broth
- 1 bay leaf
- 100 g black olives (pitted)

Wash and pat the beef dry. Wash the leeks and cut into rings. Blanch the tomatoes in hot water, cool, peel, quarter, deseed, and dice finely. Peel and dice the onions and garlic. Brown the meat in hot oil, add the onions and garlic, and sauté briefly with the tomato paste. Deglaze with red wine and a splash of broth.

Add the bay leaf and simmer gently for about 30 minutes, stirring occasionally. Add more broth if needed, then stir in the leeks and tomatoes. Season with salt and pepper and continue to cook for another 1–1.5 hours. During the last 15 minutes add the olives. Taste and adjust seasoning before serving.
