Beef Fillet with Sour Cherries

Ingredients

  • 500 g beef fillet
  • 2 EL cherry liqueur
  • 4 EL red wine
  • 1 Garlic clove
  • 1 bay leaf
  • 1 TL thyme
  • 1 TL coriander
  • 2 EL olive oil
  • 1 onion
  • 100 g celery sticks
  • 400 g sour cherries
  • 1 EL sugar
  • 3 EL pine nuts
  • fresh thyme

Instructions

    Peel and roughly chop the garlic clove, then combine with cherry liqueur, red wine, bay leaf, coriander, and thyme in a bowl. Add the beef fillet and marinate covered in the refrigerator for at least 2 hours. Preheat oven to 150°C. Remove the meat from the marinade, pat dry with kitchen paper. Heat 1 EL oil in a pan and sear the fillet all around. Wrap in foil and bake for 75 minutes.

    Peel and finely chop the onion and celery sticks. Heat remaining oil in a pot, sauté the vegetables while stirring. Wash and pit the cherries, then add them with the meat marinade. Season with salt and sugar. Simmer everything over low heat for about 20 minutes. Toast the pine nuts in a non-stick pan without fat, then mix into the cherry chutney.

    Slice the cooled fillet and serve with the chutney, garnished with thyme.
