Ingredients
- 12 lamb chops
- 8 tbsp olive oil
- 3 tsp freshly chopped thyme
- 3 tsp freshly chopped rosemary
- 2 tbsp chopped parsley
- 3 Garlic cloves
- Salt
- black pepper (ground)
- 100 g shredded cheese (finely crumbled)
- 1 tbsp finely sliced parsley
- 250 g flour
- 3 tsp baking powder
- a pinch of salt
- 1 egg
- 250 g buttermilk
- 2 tbsp Vegetable oil
- 1 muffin tin (with 12 cavities)
- butter (or 24 paper cups)
Instructions

Peel and finely chop garlic. Blend the ingredients for the herb sauce in a blender. Wash and pat dry the lamb chops.

Preheat grill. Brush lamb chops with the herb sauce and grill each side for about 3 minutes on high heat.

For the muffins, grease the muffin tin or place two paper cups together and set them on a baking sheet.

Mix flour with baking powder, cheese, parsley, and salt. Whisk egg and buttermilk, then add to the oil and mix briefly until dry ingredients are moist.

Fill the dough to 2/3 height in the muffin cavities or paper wrappers. Bake in a preheated oven at 200 °C (convection) for about 20 minutes. Remove, let cool in the pan for ~5 minutes, then take out and serve.
