Rabbit Ragout with Vegetables

Ingredients
- 1 rabbit (about 1.5 kg)
- 1 kg potatoes
- 200 g Green beans
- 3 onions
- 2 tbsp chopped parsley
- 1 tsp finely chopped oregano
- 1 Garlic clove
- 10 green olives (pitted)
- Butter (1 tbsp each)
- Olive oil (1 tbsp each)
- 4 butter cookies
- 125 ml milk
- 1 tbsp capers
- 100 ml dry white wine
- Salt
- Pepper (freshly ground)
Instructions

Wash the rabbit, pat it dry and cut into 10-12 portions. Peel, wash and cut potatoes into bite-sized pieces. Wash beans, trim and roughly chop them.

Peel onions and slice lengthwise into wedges. Peel garlic and mince. Roughly chop olives.

Heat butter and oil in a saucepan and brown the meat all over. Add potatoes, beans and onions, pour in one glass of water, and simmer uncovered for 30-40 minutes on low heat.

Soak butter cookies in milk.

Grind garlic with capers, olives, parsley and oregano into a paste in a mortar, then mix well with the soaked cookies, wine and 100 ml water.

When the meat is cooked, pour the sauce over it, season with salt and pepper, and heat briefly again.
