Ingredients
- 2 pork cutlets
- Salt
- Pepper (freshly ground)
- 2 tbsp mustard
- 1 Tbsp clarified butter
- 300 g broccoli florets
- 1 red bell pepper
- 1 tbsp butter

Cook broccoli in boiling salted water for 4 minutes, then drain, shock in cold water and let drain. Wash the pepper, trim, halve, seed, remove white membrane and slice into strips.

Season cutlets with salt and pepper and spread mustard on them. Then fry each side in hot clarified butter for about 5 minutes. In the meantime steam pepper in butter over medium heat for about 6 minutes, seasoning with salt and pepper. Briefly swirl broccoli in remaining butter and warm.

Plate cutlets with vegetables. Serve with, e.g., pan‑fried potatoes.
