Beef Curry

Ingredients
- 600 g beef stew meat
- 200 g shredded coconut
- 3 tbsp Soy sauce
- 2 red onions
- 4 tbsp peanut oil
- 2 tbsp curry paste
- 200 ml coconut milk
- 500 ml beef stock
- 400 g sweet potatoes
- 1 chili pepper
- 1 Garlic clove
- 1 cinnamon stick
- 2 kaffir lime leaves
- Cayenne pepper
- 1 splash lime juice

Rinse the meat, pat dry and place in a bowl. Mix in shredded coconut and 2 tbsp soy sauce, cover and refrigerate for about 2 hours.

Peel and roughly dice the onions. Sauté in 2 tbsp hot oil until translucent, then remove from wok. Brown the meat all over in the remaining oil in the wok. Stir in curry paste and cook briefly. Deglaze with coconut milk and stock. Peel and slice sweet potatoes. Wash, trim and finely chop chili pepper. Peel and finely mince garlic. Add onions, potato slices, chili, cinnamon, and kaffir lime leaves to the meat. Cook over low heat for about 1.5 hours, stirring occasionally, until tender. If needed, add more stock. Remove cinnamon stick and kaffir lime leaves, then season with soy sauce, cayenne pepper, and lime juice.
