Matjes Fillets on Radish–Arugula Salad

A fresh sea fish recipe featuring matjes fillets served over a crisp radish and arugula salad.

Ingredients

  • 1 white daikon radish
  • 1 bundle of radishes
  • 2 red onions
  • 1 bundle of arugula
  • 2 tbsp grape seed oil
  • 3 tbsp Lemon juice
  • Salt
  • freshly ground pepper
  • 6 Matjes fillets
  • 200 g Sour Cream
  • wooden skewers
  • dill sprigs

Instructions

    Wash, peel the daikon and slice half into thin rounds; cut the other half into ~4 cm long thin sticks. Wash, trim and slice radishes. Peel onions and cut into rings; set aside half.

    Wash, trim and dry arugula; remove tough stems if needed.

    Whisk together oil, 2 tbsp lemon juice, salt and pepper to make a salad dressing; taste.

    Toss daikon rounds and arugula with the dressing and spread on plates.

    Beat sour cream with remaining lemon juice until smooth; season with salt and pepper.

    Halve each matjes fillet crosswise. In the center of each piece place one portion of radish sticks, radishes and onion rings. Add a small dollop of sour cream on top. Fold the ends together and secure with wooden skewers. Arrange the fillets on the salad and garnish with dill sprigs and leftover onion rings. Serve with roasted potatoes.
