Ingredients

  • 300 g green beans
  • 1 pinch salt
  • 30 g pine nuts (2 tbsp)
  • 60 g arugula
  • 50 g daikon radish sprouts
  • 1 sprig thyme
  • 4 Stalks Parsley
  • 20 g sun-dried tomatoes in oil
  • 0.5 lemon
  • 1 tsp Honey
  • 8 slices Parma ham (120 g, alternative: turkey ham)','30 g pecorino cheese pieces

Instructions

    Clean and wash green beans. Boil in salted water for about 8 minutes until al dente, cool under running water and drain well. Toast pine nuts in a dry pan over medium heat until golden brown.

    Wash arugula, rinse, spin dry. Cut radish sprouts from the bed. Wash thyme and parsley, shake off excess moisture and pluck leaves. Drain sun-dried tomatoes and reserve 1 tbsp of oil. Squeeze lemon juice.
